What I'm Eating...Lambs Liver & Chorizo
A quick lunchtime treat using fresh lambs liver and some leftover vegetables. I never had any bacon, so used the chorizo instead and I think they really work well together.

Ingredients:

-lambs liver,
-chorizo,
-onion,
-roasted red pepper,
-broccoli,
-brussels sprouts,
-avacado,
-cabbage,
-parsley,
-oregano,
-salt,
-pepper, and
-extra virgin olive? oil infused with truffle.

Directions:

-started by boiling off the cabbage for 10 mins,
-add the onion, chorizo and oregano to a frying pan with a little rapeseed oil,
-let the onion soften then add the liver and the red pepper,
-I microwaved the broccoli, brussels, parsley, salt and pepper for 2 mins to heat them (as they were pre cooked),
-keep an eye on the liver as it doesn’t take too long to cook (unless you want to make sure it is dead),
-add the avacado and olive oil to the brussel/broccoli and mix,
-serve.
