I’m confident, happy, and far more relaxed than I’ve ever been – and my focus has changed completely. Super healthy winter soup
My favourite soup ever: Heart and soul warming Red Pepper and Ginger Soup
If –like me- you struggle a little with the bleakness of February and the fact that it is so cold and there are no leaves on the trees, then pour yourself a big bowl of this delicious soup. It is healthy winter warmer, a lunch in its own right warming heart and soul that offers a feel good factor that allows you to –just momentarily- escape on holiday. Even if you are in warmer climates this nutritious soup will lift you up and make you smile.
This is my favourite soup ever, relatively easy to make and I couldn’t recommend it highly enough. Go on, try it!
Ingredients (serving 4):
3 red peppers, halved and de-seeded
1 red onion, quartered
2 garlic cloves
olive oil
5cm piece of root ginger, grated
1 teaspoon ground cumin
1 teaspoon ground coriander
1 large potato, chopped
900ml vegetable stock
(Optional: Fromage Frais)
• Place the red peppers, red onion, garlic cloves in a non stick roasting tin and roast in the oven at 200 degrees C for 40 min. Check throughout and if the onion starts to brown too much cover them with the pepper halves.
• In the meantime, heat the oil in a pan and gently fry the ginger, cumin and coriander for a few minutes before adding the potato. Season to taste with salt and pepper. Then add the vegetable stock and simmer for 30 minutes with the lid on.
• Remove the roasted vegetables from the oven and place the red peppers in a polythene bag. Tie the top of the bag and leave to cool. Add the onions to the stock and squeeze the garlic pulp from the skins into the saucepan. Remove the skins from the peppers and add them to the soup to all simmer for 5 minutes.
• Puree the soup with a blender and ladle into bowls. If desired top the soup with a spoonful of fromage frais.
