"Spanish Chicken..."


Spanish Chicken...
This might not be the healthiest of meals but it is most definitely one of the tastiest.

We came across it whilst eating out at a friend’s house a little while ago and it has since become one of our favourites at home.

It is easy to prepare…and the perfect meal for after a race or competition to recharge on energy, protein and carbs.

This recipe serves 4 people:

4 x Tbl spoons of Olive Oil
2 x Packs of chicken thighs and drum sticks (take skin of)
400g of chopped tomatoes
150g of chorizo sausage (chopped)
100g of green and black olives
3 x Garlic cloves
2 x Bay leafs
Dried thyme to taste

To go with this you can either have brown rice, mash potato, some nice rocket or maybe even a ciabatta, the variety is endless really.
