Recipe: Protein Pancakes


Protein Pancakes
Quick and simple, perfect as a mid morning/afternoon snack, breakfast or post workout.

Ingredients:
-1 egg,
-1 tbsp coconut flour,
-1 scoop protein powder (Bodybuilding Warehouse Premium Whey Vanilla works perfectly),
-1/8 tsp baking powder,
-coconut oil,
-dash of vanilla extract, and
-water or milk (skimmed, coconut, almond etc).
(*other ingredients: raisins, sultanas, nuts, seeds, cocoa powder, banana, dessicated coconut.)

Directions:
-add egg and vanilla to a bowl and whisk,
-add coconut flour, baking powder and protein powder to the bowl and mix together until there are no lumps,
-if the mixture is too thick add small amounts of water or milk until the batter has a better consistency,
-(any additional ingredients could be added at this stage)
-heat a little coconut oil in a frying pan and set to a medium heat,
-add batter to the pan (all of you want one big pancake or spoonfuls if you want a few small ones),
-(additional ingredients could also be added at this stage)
-wait until bubbles appear in the top of the pancake and flip it,
-cook until light/dark brown on both sides.

Serving suggestion:
-nut butter,
-fresh fruit,
-greek yogurt and nuts/seeds,
-100% fruit jam.
