Recipe: Primal Pancake Day...


Loaded Pancakes
As Shrove Tuesday is upon us…there areplenty of lowcarb versions of the much loved pancake. The only task here is going to a shop and picking up the ingredients…making them is simple and cooking them is even easier.

Here’s six options…

(i) Carrot Cake Pancakes:

Ingredients;
-3/4 cup almond flour,
-1/8 cup chopped walnuts,
-1 tsp baking powder,
-1/2 tsp cinnamon,
-pinch of salt,
-pinch of nutmeg,
-pinch of ginger,
-1/8 cup honey,
-1/2 cup buttermilk,
-1/2 tsp vanilla,
-1 egg, and
-1 cup grated carrot.

Dierctions;
Mix dry and wet seperately, then add together until combined and there is no lumps. Batter ready. Drop a spot of oil into a pan and heat to medium/high. Then place a spoonful of mixture into the pan. Wait for bubbles to appear on top of the pancake and flip.


(ii) Almond Pancakes:

Ingredients;
-2 eggs,
-1/4 cup water,
-1/8 cup oil (olive oil, rapeseed oil or coconut oil),
-1 cup almond meal,
-1 tsp baking powder, and
-1/4 tsp salt.

Directions;
Same directions as above. Serve with greek yogurt and fresh fruit or 100% fruit jam, or banana and nut butter, or mix up some protein powder with a little milk or water and spread on top. NOM!


(iii) Butternut Squash Pancakes:

Ingredients;
-1 egg,
-1/4 cup butternut squash (roasted and mashed),
-1 tbsp honey,
-pinch of cinnamon and nutmeg,
-1/4 cup almond meal,
-pinch of salt,
-1/4 tsp vanilla extract, and
-1/8 tsp baking soda.

Directions;
Again same as before.


(iv) Coconut Pancakes:

Ingredients;
-2 eggs,
-1/8 cup coconut flour,
-1/8 cup yogurt or coconut milk or coconut cream or milk,
-1 tbsp honey, and
-dash salt.

Directions;
Same as above.


(v) Chocolate Pancakes:

Ingredients;
-1/4 cup coconut flour or almond flour,
-1 tbsp pumpkin puree or butternut squash or sweet potato or banana,
-1 egg,
-1 tbsp unsweetened cocoa powder,
-1/4 tsp baking powder,
-1/4 tsp baking soda, and
-1/4 tsp vanilla extract.

Directions;
Same as above.


(vi) Protein Pancakes:
